As anyone who’s met me knows, I am a big fan of the Bianchi’s Group restaurants. Centralé, their latest opening over in Easton, is the first one I’ve hit in 2023, and not even intentionally for a dinner. I find myself there for a pasta workshop, but knowing all too well that I was going to be fed. And oh I was. The classic Binachi’s focaccia before we began, and an impeccable cacio e pepe with truffle once we’d finished making our own pasta - thankfully not using ours as the base. Throw in some prosecco, an espresso martini (at 1.30 in the afternoon! And I’d been for a run in the morning! What a terrible brilliant idea), and a shot of limoncello at the end, and you’ve got a fascinating if not unwelcome food to booze ratio. But of course, I wasn’t here as a restaurant patron, so no dessert, which I’m incapable of stopping myself from normally. Dom and Ben recently posted a statement about the financial difficulty of running the restaurants in this economic environment. It’s terrifying to think that one of the most popular restaurant groups in Bristol is making less than 1% profit. Support your local restaurants.
